Years ago, we had a hankering for something sweet at our house, but our cupboards were shamefully bare. We don’t shop on Sunday and so, desperate to fill the void, we turned our search to Google, which led us to this gem of a recipe by Paula Deen. The ingredients list is standard stuff that either you possess or are guaranteed to find at your next door neighbor’s: butter, brown sugar, 1 egg, flour, baking powder and vanilla (pecans and powdered sugar are optional). As you know, we love a soft, chewy cookie bar at our house, and this is the simplest of them all, but it is also a wonderful one. Eaten warm (as we suggest), these are SO soft and showcase why brown sugar is so super good. Serve with vanilla ice cream and caramel sauce, if you have it.

- ¼ cup butter
- 1 cup packed light brown sugar
- 1 egg, beaten
- ¾ cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon vanilla extract
- ¼ cup chopped pecans
- Confectioners' sugar, for dusting
- Preheat oven to 350 degrees F.
- Spray an 8-inch square pan with vegetable oil cooking spray.
- In a small saucepan, melt the butter.
- Turn off the heat, add the brown sugar and stir until smooth.
- Stir in the egg.
- Stir together the flour and baking powder and stir into the brown sugar mixture.
- Stir in the vanilla and pecans.
- Pour the batter into the prepared pan and bake for 20 minutes.
- When cool, dust the top with a sifting of confectioners' sugar.
- Eat warm!
