Tomato, Bacon and Gruyere Tart

Ingredients
  • 1 thawed puff pastry sheet
  • 1.5 cups grated gruyere cheese (no replacements!)
  • 4 slices cooked crumbled bacon
  • 5 or 6 thinly sliced small ripe roma tomatoes (it's okay if you don't use them all!)
  • 2 tsp fresh thyme leaves
  • ½ tsp kosher salt & a few grinds of pepper
  • 1 beaten egg
  • 1 tsp water
Instructions
  1. Roll out the puff pastry into a 10 X 14 inch rectangle on a sheet of lightly floured parchment paper. Transfer it to a baking sheet and sprinkle with the gruyere, leaving a two inch border on the long side.
  2. Top with the cooked bacon, tomatoes, thyme leaves, salt and a few grinds of pepper.
  3. Fold in the long side.
  4. Cut vents in the pastry (see photo).
  5. Fold in a half-inch of the short ends and pinch to seal.
  6. Brush the pastry with the beaten egg mixed with water.
  7. Bake at 400 degrees until golden brown, start checking at 20 minutes.
